The skillet is my new favorite kitchen item! You can cook just about anything in it, including cookies. After experimenting a couple times with a skillet (including baking a pie in it) I figured it would be interesting to try to bake a cookie with it! Just a gigantic cookie perfect to top with ice cream.


Skillet Cookie Recipe
Prep Time: 20 min. | Cook Time: 35 min. | Yield: 8 servings.


INGREDIENTS:

  • 3 cups all-purpose flour 
  • 1 1/4 teaspoons baking soda
  • 1 1/2 teaspoons salt 
  • 3/4 cup (1 1/2 sticks) unsalted butter 
  • 1 1/4 cups brown sugar 
  • 1 cup sugar 
  • 3 eggs 
  • 2 teaspoons vanilla extract 
  • 2 1/2 cups semi-sweet chocolate chips 


DIRECTIONS:

  1. Preheat the oven to 350 degrees and grease a 10-inch skillet with oil or butter. 
  2. In a large bowl, whisk the flour, baking soda and salt. Set aside. 
  3. In a stand mixer, mix the butter, brown sugar and sugar until well combined. Then add the eggs one at a time and then add the vanilla extract. 
  4. Add the flour mixture to the butter/sugar mixture and mix until just combined. Fold in the chocolate chips. 
  5. Press the dough into the skillet and bake until golden brown. Around 35 minutes. Let cool completely before cutting and serving with ice cream or milk!
